Parsley, Rosemary, or Oregano - 1 oz - The Corner Farm, Spokane, WA - Parsley's flavor may be subtle but this nutrient-rich herb is a mainstay in the kitchen! Use in a chimichurri, or top on a fresh summer quinoa salad. Try this Spring Onion + Lentil Salad, Fresh Gazpacho, or Late Summer Couscous Salad.
Italian Eggplant - ~3/4 lb - Frog Hollow Farm, Walla Walla, WA - These pretty purples are tender, mild, and sweet with a light bitterness. Before they're cooked they have a spongy texture that absorbs the flavors of whatever they're cooked with, but after cooking they become soft and creamy. Make the classic eggplant parmesan, grill them to enjoy with pasta, or roast and blend for baba gahnoush.
Walla Walla Sweet Onions - ~ 3/4 lb - Elithorp Farm, Deer Park, WA - Walla Walla onions are sweet with less bite than other varieties. These are a great onion for either raw or cooked dishes.
Kale - 1 bunch - Hayshaker Farm, Walla Walla, WA - Kale is a tasty and nutritious green with a earthy and bittersweet flavor. It has high levels of fiber, antioxidants, calcium, vitamins C and K, and iron. Massaging or cooking these greens breaks down their texture, making them sweeter and easier to digest. Kale is choice for a hearty salad, kale chips, smoothies or soup.
Yellow New Potatoes - ~ 1 1/2 lb - First Cut Farm, Mount Vernon, WA - New potatoes are young and freshly harvested, allowing for a sweeter flesh and thinner, tender skins. Try them roasted with butter and herbs!
Chilaca (Pasilla) Peppers - ~1/2 lb - Hayshaker Farm, Walla Walla, WA - Chilaca peppers are known as pasilla peppers when they’re dried and are a base ingredient for mole sauce, enchilada sauce, rubs, and marinades. When fresh, try them in salas, soups, or a traditional Mexican meat stew!
