LATE SUMMER COUSCOUS SALAD

I N G R E D I E N T S

1 CUP couscous

5 TBSP olive oil, split

Salt and pepper

1 TSP oregano

2 sweet peppers, sliced into thin rounds

1 cucumber, diced

1/4 red onion (optional), chopped finely

1 tomato, (optional), diced

1 CLOVE garlic, chopped finely

2 TBSP parsley, chopped

2 TBSP red wine vinegar

Feta from Brush Creek Creamery (optional)

P R O C E S S

1. Prepare the couscous according to package directions but with the addition of dried oregano and 1 TBSP olive oil added to the water.

2. Prepare the veggies.

3. In a serving bowl, mix to gether couscous, vegetables, and the remaining ingredients. Enjoy!
