Beet Bunches - 1 bunch - Ralphs Greenhouse, Mount Vernon, WA - Beets have earthy, sweet, and floral flavors! Try roasting as a side or grating fresh as a sandwich topper. Pairs well with lemon, parsley, thyme, black pepper, or spring greens.

Curly Endive - Frisée - 1 count - Hayshaker Farm, Walla Walla, WA - A delightful chicory for salad with a beautiful blanched interior. Prized for its beautiful vibrant green-to-yellow color and lacy texture, frisée offers a crisp peppery and bitter bite.

Garlic Scapes - 1/4 lb - Makana Farm, Otis Orchards, WA or Hedlin’s Family Farm, La Conner,WA - Garlic scapes are the stalks that grow from the bulbs of hardneck garlic plants. Chop into small pieces and sauté for dishes that call for garlic cloves - the flavor is similar with an added freshness! You can also try grilling them whole or making garlic scape pesto!

Mixed Summer Squash - ~ 1 1/4 lb - Elithorp Farm, Deer Park, WA - A favorite of summer! This mix could include green zucchini, yellow zucchini, and or zephyr squash (green+ yellow). Try Chickpeas with Patty Pan and Herby Dressing and this Summer Squash and Chickpea Salad.

Broccolini - 1 bunch - Hayshaker Farm, Walla Walla, WA or Mejia Romero Farm, Skagit Valley, WA- Broccolini is crunchy with a mild bitterness when raw and sweeter when cooked. Sauteing broccolini as a side dish or adding to curry or pasta are some of our favorite ways to use these versatile little trees! Pair with strong flavors like garlic, lemon, chili, or sesame.

Mediteranean Cucumbers - ~ 1 lb - Elithorp Farm, Deer Park, WA or Hedlin Farms, Mount Vernon, WA - These small and mild cucumbers have a thin skin which makes them a great option for snacking, sandwiches, or salads. Mediterranean cucumbers are on the crisper and less watery side of the cucumber spectrum! They’re an early variety in the spring, making one of the first cucumbers to enjoy.

Fresh Sweet Onions - 1 count - Boldly Grown Farms, Bow, WA - Use both the bulb and greens of these fresh onions that haven’t been dried or cured. Fresh onions have a a sweeter and milder flavor than storage onions, making them a great candidate for salads or grilling.

ARTISAN CHEESE | Cotija - LakeWolf Creamery, Deer Park, WA - This cheese is made by a similar aging process as our Enchilado. It brings a pleasant bite, and is traditionally sharper than the sweet Enchilado. Cotija doesn’t melt, but crumbles and shreds nicely to top-dress soups, salads, casseroles, tacos, tostadas, chilies, and pastas. Because of it’s uniquely strong flavor, some like to add Cotija directly into the recipe to give the dish verve.

Dark Cherries - 1 count - Tonnemaker Hill Farm, Royal City, WA - Sweet, dark red cherries! Tieton cherries are the first of cherry varieties to be available in our region. Known for its extraordinarily large size, mild firmness, and a mild sweet flavor - these cherries make for a special snack or baking amendment- the shining star of our INW Cherry Roll-Ups LINC Box Recipe!

Apricots - ~ 1 count - Tonnemaker Hill Farm, Royal City, WA - Apricots are beautifully golden, sweet, and juicy. Great for snacking, freezing, baking, preserving, and drying. The subtle tartness and complex flavors of apricots set them apart from ultra-sweet peaches!

GRASS-FED BEEF SHARE | grass-fed and grass-finished beef - Ramstead Ranch, Ione, WA - Ramstead Ranch focuses on raising their herd using regenerative practices and providing a stress-free life. The cows live on pastures, drink clean, spring-fed water, are rotated daily to fresh fields that have not been sprayed, and have access to sun and shade as they choose. HERITAGE PORK SHARE | grass-fed and grass-finished heritage pork - Ramstead Ranch, Ione, WA - Berkshire pork is incredibly juicy, has a fantastic flavor, marbles well and is very tender. These pigs live outdoors in diverse pastures and woodlands where they can root, wallow, and lounge to their hearts' content. PASTURED CHICKEN SHARE | pastured chicken - Link’d Hearts Ranch - AlyssaMarie has raised pastured chickens since 2008. She rotates the chickens daily on no-spray pasture so they can enjoy the sunshine, bugs, and fresh water. The poultry receive a non-GMO, locally grown grain mix produced by farmer on the Palouse.

TUESDAY, THURSDAY, FRIDAY - The Grain Shed, Spokane, WA - oatis & oat pan - The Grain Shed crafts each loaf of bread with incredibly flavorful ingredients that are unique to the Inland Northwest. The Grain Shed takes local grain from within 100 miles of Spokane and mills it fresh in an on-site stone mill. Their natural fermentation method and wood-fired oven  showcase the unique flavors of ancient, heritage, and landrace grains.
