OR Italian Eggplant - Elithorp Farm, Deer Park, WA - These pretty purples are tender, mild, and sweet with a light bitterness. Before they're cooked they have a spongy texture that absorbs the flavors of whatever they're cooked with, but after cooking they become soft and creamy. Make the classic eggplant parmesan, grill them to enjoy with pasta, or roast and blend for baba gahnoush.

Green Kale - Big Sage Organics, Othello, WA - Kale is a tasty and nutritious green with a earthy and bittersweet flavor. It has high levels of fiber, antioxidants, calcium, vitamins C and K, and iron. Massaging or cooking these greens breaks down their texture, making them sweeter and easier to digest. Kale is choice for a hearty salad, kale chips, smoothies or soup.

Broccoli - Big Sage Organics, Othello, WA - Broccoli is crunchy with a mild bitterness when raw and sweeter when cooked. Broccoli cheddar soup, broccoli curry, and pasta with roasted broccoli are some of our favorite ways to use these versatile little trees!
