SIMPLE SEARED PATTY PAN

Serves 2-4

I N G R E D I E N T S

1 POUND patty pan squash (or other squash), chopped into wedges

2 CLOVES garlic, minced

1/2 fresh red onion, sliced thinly

Olive oil

Salt and pepper

P R O C E S S

1. Heat a skillet to medium with a drizzle of olive oil. Add the onions, sautéing until translucent.

2. Add the garlic and patty pan squash to the mix, arranging so the patty pan cut-side down on the pan. Sprinkle with salt and pepper and sear without stirring for 3-5 minutes, until browned.

3. Flip the patty pan and cook for another 5-10 minutes, stirring occasionally, until the patty pan has browned on both sides.

4. Enjoy these versatile summer squash as a delicious summer side dish, use in fajitas, or top your pasta with fresh summer veggies!
