COLD SOBA (BUCKWHEAT) NOODLE SALAD
w/ tahini dressing

Serves 2-4

Refreshing and delicious cold soba noodle salad. We love that this recipe is so simple for hot summer days when cooking sounds intimidating. Inspired by Smitten Kitchen's Sesame Soba and Ribboned Omelet Salad.

I N G R E D I E N T S

2 bell peppers

1/2 slicing cucumber

2 medium carrots

Green onions (optional)

2/3 package soba noodles

2 TBSP soy sauce

2 TBSP olive oil

2 TBSP water

1 TSP sesame oil

1 TSP rice wine vinegar

4 TBSP tahini

P R O C E S S

1. Cook the soba noodles according to package directions.

2. Slice cucumber, pepper, and carrots into matchsticks.

3. Prepare the dressing by whisking together the remaining ingredients.

4. Serve soba noodles with veggies on top, drizzled in the tahini dressing. Sprinkle with green onions and enjoy!
