BLISTERED SHISHITO PEPPERS

½ POUND shishito or padron peppers

2 TBSP olive oil

2 TBSP lemon zest

1 TSP salt

P R O C E S S

  1. Heat a large skillet over high heat with olive oil.

  2. Add peppers to the pan, evenly distributed.

  3. Let cook undisturbed for two minutes until they start to blister. Use tongs to turn the peppers over and allow to cook for another 2-3 minutes.

  4. Transfer to a serving platter and sprinkle with salt and lemon zest. Enjoy as an appetizer, snack, or side!
