GROWN AT ELITHORP FARM
Elithorp Farm is a naturally grown, small family farm in Deer Park, WA, committed to producing healthy produce without the use of pesticides, herbicides or synthetic fertilizers. The farm is 17 acres. John and Cindy specialize in Mediterranean cucumbers, several varieties of tomatoes, summer squash, but they also love to grow specialty potatoes, broccoli, beets, peppers, leeks, various greens and melons and all sorts of various winter squash, pumpkins and gourds!

STORAGE PRO TIP
Store potatoes in a cardboard box or paper bag in a dark place with a temperature of 45-50 F. Remove any potatoes that are soft to keep more potatoes from going bad.
RECIPE INSPIRATION
This recipe, adapted from Smitten Kitchen, makes the purple even more bright and beautiful!
Boil the potatoes whole in salted water for 15 minutes.
Remove the skins.
In a bowl, mash the potatoes into chunks with a fork.
Add a few minced shallots, 2 Tbsp lemon juice, 2 Tbsp olive oil, and salt and pepper to taste.
Sprinkle with fresh, chopped parsley.
